Chicken Enchiladas: New Gluten Free Recipe

I took this recipe from Pinterest.  Thanks to the Budgetsavvydiva, I found a winning recipe with some minor alterations.

They are called The Best Chicken Enchiladas. I would have to agree with her on that! 🙂

Grocery list:
10 soft corn tortilla shells (warmed up slightly in the microwave so they are pliable to wrap up)
2 cups cooked, shredded chicken
2 cups shredded cheese (I omitted the cheese because I am not a cheese fan and Aaron didn’t want additional cheese without him adding it himself)
3 Tbsp. butter
2 Tbsp. Corn Starch (I used about 3 times this much to get it really thick)
2 cups chicken broth
1 Clove of Minced Garlic
1/2 Teaspoon of Salt and Pepper
1 cup sour cream Fat free plain Chobani greek yogurt (my healthified alteration)
1 teaspoon Garlic Powder
1 Teaspoon of lime juice
1 bag of spinach
Get busy:
Preheat oven to 350 degrees.  Grease a 9×13 pan.

In a sauce pan – melt the butter and stir in corn starch and cook for one minute. Add broth and whisk until smooth. Keep over heat until it bubbles and becomes thick. Stir in greek yogurt, garlic powder, lime, salt and pepper. Do not let it boil.
Pour a little bit of sauce on the bottom of the pan to keep the shells from getting hard when cooked.
Fill tortilla shells with shredded chicken (I also added some spinach leaves to each wrap to get some greens in)
I just added some spinach on top of mine since I didn’t know how well Aaron would receive spinach in his Mexican food. Also put the leftover chicken on top of his side, (hence the chunks).
Pour the rest of the mixture over enchiladas.
Top with any cheese you might want
Bake for 25 min or until the insides are warm.
Yes, I might have dipped out a little sample while waiting on Aaron to get home from delivering sheep 😉

Gluten free meatloaf

Guess what had been delivered when we got home last night?? Aaron’s thesis defense/graduation gift from me!!!

I was excited that we finally got it, it was very heavy and cost a lot to get it shipped… No, I didn’t get him a life sized sheep statue. I got him this farm barn and set of livestock that he’s wanted since before I knew him. Why he never received it before I don’t know. We even registered for it on our Amazon wedding registry. He was very sad he didn’t get it as a wedding gift.


It is pretty cute if you ask me. Why he never asked for it for his birthday before he met me I have no clue!

But he was one excited little boy soon to be Master’s graduate. He passed his thesis
Monday and has been working on his corrections… Tonight he played with his gift 😉


So, while I was doing this… (working out like a crazy person)


My twin was doing this:


Jordan, her hubby, bought her 4 of the $1 size portions of custard from Culvers. I am pretty sure I would have just ordered a quart and let the earth remain a little greener without all those plastic cups. Haha 😉

I was craving Sheridan’s custard at this point, but settled for picking Aaron up at school (we ride to and from work together to save a few bucks) and headed home and made meatloaf at his request.

I made it gluten free obviously.

Grocery list:
1 pound hamburger
1 cup brown rice cooked
1 egg
1 tsp mustard

1tsp garlic salt


1 c ketchup
1 tsp mustard
2 tbsp brown sugar

Get busy:
Combine all of the loaf ingredients and place in a glass baking pan.

Mix all of the topping ingredients together and pour over top of the loaf.


Bake for 35-45 min at 350 degrees.

Cut up and enjoy!


I pretty much mutilated it from the get go. I am not a huge meatloaf fan, but every once in a while I can eat it. Aaron said it tasted like meatloaf even though it was gluten free. He is such a trooper.

Reader Recipe: Mediterranean Nachos

I received an e-mail with a tested gluten free recipe. The whole family thought it was delicious and the young lady who sent it to me said it was very easy and a welcomed gluten free meal! Thanks for the suggestion, I am excited to try it soon!

Mediterranean Nachos

Grocery list:

Restaurant style corn chips (tortilla chips)

Feta cheese 

Sun dried tomatoes

Roma tomato

Green onion

Black olives

*black beans

*Italian Style Turkey meatballs

*These were not in the recipe, but she added them

 Get Busy:

Dice the sun dried tomatoes, Roma tomatoes, green onions and black olives and mix in a bowl.

Preheat the meatball and beans and add them in the mix in the bowl.

Crumble the cheese on the chips and microwave until the cheese melts and bubbles.

Put mix from the bowl on the chips and enjoy.

Doesn’t this sound delicious? I have yet to try making them… something about being too busy to be home and actually fix a meal in forever 😉 Can you tell this girl is ready for a slow down, but not getting one for the next 6 weeks it looks like. Next time I fix a meal I will probably be an old married woman  married, my wedding is in a month and a day!

 For now I am working away at school while it is getting up to 100 degrees outside EEK!

Dinner recipe: Mexican tortilla stack ups

At my bridal shower in Indiana our neighbor growing up adopted us as her daughters. We would get our hair done with Aunt Shirley, go shopping for show outfits and she is the one who introduced us to lambs! Aaron can thank her 😉

Anywhos, Aunt Shirley was looking out for me as always and gave me The Gluten Free Bible. On our drive home I looked through it and got very excited to try almost every single recipe in it. Here is one I made and enjoyed a lot!


As you can see in the recipe there was not any meat included. I can’t have a meal without meat so I browned some hamburger and added it the can of drained black beans, 1 cup frozen corn, and gluten free chili mix seasoning (I didn’t have any taco seasoning mix).


This is what the bool portrayed the finishing product looking like:


Mine kind of fell apart, but it was still delicious and I highly suggest it as an easy dinner.


Chicken Broccoli Casserole

If you have ever been to Putnam County Indiana, I guarantee you have eaten at or seen the billboards and heard the buzz about Almost Home. They are very well known for their strawberry pizza, chicken and broccoli casserole, their dessert tray and many other yummy items.

Years ago my Mom bought their cookbook and we enjoyed making many of their recipes! Problem is, most of them contain gluten. So we did a little experimenting 😉

Grocery List:

2 bags frozen broccoli spears

2-3 boneless & skinless chicken breasts

1/3 cup butter or margarine

1/3 cup gluten free flour

1 ½ cups chicken broth

1 ½ cups non-dairy liquid creamer or milk

1/2 pound processed cheese (Velveeta anyone?)

2/3 cup mayonnaise

Potato Chips


Get Busy:

Pat-boil and drain

  •                 2 small packages of frozen broccoli spears

Arrange broccoli in a buttered 9×13 inch baking dish, covering the bottom of the dish.

Cook until just tender:

  •                 2-3 whole boneless, skinless chicken breasts

Tear chicken into bite-sized pieces and cover the broccoli with the torn chicken

Melt in saucepan:

  • 1/3 cup butter or margarine
  • 1/3 cup gluten free flour
  • 1 ½ cups chicken broth
  • 1 ½ cups non-dairy liquid creamer or milk

Cook to a medium-thin white sauce

Turn heat off and add: ½ pound processed cheese (such as Velveeta)

Stir until melted Then add

  • 2/3 cup mayonnaise

Blend well and pour over chicken

Top with a layer of potato chips (just make sure they are gluten free, most frito lays non flavored, are as well as many store brands). Bake at 350 degrees for 25-35 minutes or until bubbly throughout.


Pei Wei Gluten Free Review

Pei Wei is probably one of my most favorite restaurants to go to and never ever have I had a negative experience.


I generally always get the sweet and sour chicken with extra vegetables or the Vietnamese Rolls.

Both are delicious and not the only two gluten free options, they even have gluten free soy sauce. The only thing they have not quite mastered are the fortune cookies… Still off limits but by the time I am done with my meal (I get two meals out of the entrees like sweet and sour), I have absolutely no room for anything else!

BUT if you are super hungry and want to share a starter: Edamame wins the show for all

Fish tacos

Dinner idea!!! 🙂

Had to share this easy gluten free recipe!! Compliments of our good friends, the Millers. 🙂

Fish Tacos:

Lemon olive oil
Corn tortillas

Toppings of our choice (you can choose whatever):
Cilantro mmmmm…
Hot sauce (a fruity kind is perfect)
Black beans

Get busy:
Cover fish in olive oil and place in skillet and sear.

You may choose to fry your corn tortillas if you wish, I just warm mine up in the microwave.

Once the fish is done, cut it up in smaller pieces and load up your tortillas and enjoy 🙂
