Pork Picante

This recipe is supposed to be named “Peachy Pork Picante” from the Pork Producers back in the day, but for some reason my Mom always used APRICOT instead of PEACH preserves and there we have it.  This is my Mom’s favorite gluten free meal to fix for my twin and I because the rest of our family loves it already and it’s the easiest thing to keep groceries on hand for and to fix. 

Grocery List:

  • 2 lbs of Pork (I usually use loins)
  • 1 (8 oz) jar of Red Gold Salsa
  • 1/3 cup Apricot Preserves
  • Instant Rice (White or brown)

Get Busy:

Cook as much rice as you would like to serve with your meal.  Cut up Pork in cubes and put in skillet with water and let cook “brown”. Once the meat is done drain off liquids.  Pour in salsa and Apricot Preserves.  Let simmer for approx 10 min.

I serve this on top of a bed of rice. You can use more or less salsa and preserves, depending on how juicy and/or sweet you like your food.
