If there is one thing that I have learned being gluten intolerant, it is that I have a newfound love for Mexican food! Not even kidding, I have it at least 5 times a week and never grow tired of it. Of course I always have to make sure that I get corn tortillas and I never eat the chips at the restaurant (can you say cross contamination at its fnest?!?). Here is a very easy recipe that you can throw together and scoop up with corn tortilla chips, wrap in a corn tortilla or a homemade fried tortilla.
- 1 ½ lbs ground beef
- Chopped onion
- 1 can corn (drained)
- 1 can tomato w/ green chiles (Rotel type)
- 1 8 0z can tomato sauce
Get to browning:
Brown the beef and chopped onion.
Add next 3 ingredients and simmer 10-15 min.
Serve on top of corn chips or corn tortillas(crispy or soft)
