Best Ever Chocolate Pudding

I figured I might as well start off my recipe collection on my blog with a bang!!! My Dad’s favorite dessert ever is Homemade Chocolate pie made by his Great Aunt.  This is a favorite still around our house, obviously this is a recipe for Chocolate pudding because I have not found a good recipe for a gluten free pie crust so I just enjoy this as pudding instead of pie and eat an extra helping or two since I can do that without feeling guilty sans crust. 🙂

Grocery List:

  • 4 oz German Chocolate                
  • 1 oz Unsweetened Chocolate                   
  • 3 ¼ cup sugar
  • ½ cup cornstarch                             
  • ½ cup gluten free flour or more cornstarch         
  • ¾ teaspoon salt
  • 6 cups milk                                         
  • 9 tablespoons butter or margarine          
  • 3 teaspoons vanilla
  • 6 eggs

Get busy:

Beat eggs in separate bowl. Melt chocolate add chocolate with sugar, cornstarch, flour, salt and milk in heavy saucepan. Blend well and place over medium heat. Chocolate will look unmixed but will mix and blend in. Boil 3 minutes. Slowly pour 1/3 pudding into beaten eggs stirring constantly, add egg mixture to pudding and return to heat and boil 1 minute longer stirring constantly add butter, vanilla, and salt, pour into bowls and refrigerate. 

Or you can eat this right away warm with a scoop of ice cream.
